I have been mostly vegetarian for the last 15 years.
We giggled and the tour carried on.
All this to say, meat-free meals have come a long way.

It’s pretty safe to say that everyone loves pizza!
And there are tons of delicious and unique ways you’ve got the option to approach it.
Another great at-home pizza option, would be thisautumn harvest pizzawith butternut squash!

Stuffed peppers
Growing up, I remember my parents often making stuffed peppers.
Mac & Cheese
Mac and Cheese is another favorite and complete comfort food for the whole family.
I love how thisvegan mac and cheeserecipe uses butternut squash noodles for some extra healthy carbs and flavor.

You could always stir some peas, broccoli or cauliflower into the sauce for some extra flavor and veggie-packednutrients!
When cooking at home, thisvegan coconut curryand thislentil and mushroom curryboth look absolutely amazing.
you might put them over sweet potato noodles, wild rice or another starch or grain of your choosing!

That said, I do think it’s important to see to it the dish is flavorful and filling.
I’m eyeing thiscreamy tomato penne pastatopped with some mushroom and black bean “meatballs.”
With a glass ofwineon the side, of course.

Thesevegan pinto bean tacoswith tomato, corn and avocado would be perfect.
Thesechickpea and brown rice burgersare a classic and can be topped with your favorite burger or toppings.
If spicy is more your style, you may want to try thesechipotle black bean burgers.

As for me, I’m going to dive head first into thesetropical veggie burgerswith pineapple and avocado!
